La roveja by Dolci Giuseppina It's an ancient legume from the Apennines, known since the Neolithic: small, colorful, rich in iron, and so flavorful it doesn't require sauce. In August, it's cooked with a trick: everything the night beforeSoak it for 12 hours, then boil it in unsalted water for 45 minutes in the morning, drain it, and let it cool. The oven and the stove remain off.
1. The cold salad from the counter. Cold Roveja with the Mixed Heirloom Tomatoes of Agroemme wedges, thinly sliced paglina onion, oil, basil and flakes of Pecorino from the Pistoia Mountains by Rachele. A unique dish that holds together half the newsletter.
