The Colbotto Malvasia and Mantonico of Le Quattro Volte

Colbotto Bianco is a Calabrian refermented wine boasting a delightful effervescence and a fresh, lively flavor: a blend of 80% Malvasia and 20% Mantonico, harvested early, aged in stainless steel and refermented in the bottle according to the ancestral method. In the glass, it displays a splendid golden color and floral notes that showcase the best of the Malvasia grape, a native Mediterranean varietal known for its distinctive aroma and flavor profile. On the palate, it offers a balance of acidity and sweetness, with tropical fruit and citrus flavors that linger into the finish, while the bubbles lend a pleasant liveliness: the perfect accompaniment for any occasion, especially as an aperitif.

The roots of this Colbotto are deep in tradition

Malvasia carries a thousand-year-old journey in its name: it derives from Monemvasia, the Greek fortress in the Peloponnese from which Venetian ships shipped the most famous wine of the Middle Ages. "Malvasia wine" so conquered Europe that in Venice even the taverns took the name "malvasie," and the grape variety took root in every corner of the Mediterranean—including Calabria, where it found a second home. In Colbotto, this illustrious traveler encounters Mantonico, the ancient Ionian white, and the bottle-fermentation of the sparkling peasants: three Mediterranean stories that toast together.

Organoleptic examination and characteristics

Visual examination: splendid golden color, animated by the fine effervescence of refermentation in the bottle.
Olfactory examination: elegant floral notes with hints of tropical fruit and citrus.
Taste test: Balance between acidity and sweetness, with flavors of tropical fruit and citrus lingering on the finish; the bubbles add liveliness and overall freshness.
Technical data: Malvasia 80%, Mantonico 20% (early harvest); alcohol 11% vol; aged in stainless steel and refermented in the bottle; production of 3000 bottles.
Match with: It pairs exceptionally well with fish dishes, light first courses, and salads; its refreshing character makes it ideal for outdoor dinners, picnics, and social gatherings.

How to Best Use: Colbotto Malvasia and Mantonico

  • FISH DINNER ON THE TERRACE — His favourite terrain: a baked fish flavoured with Organic Seasoning for Fish & Seafood and a salad of Organic Sant'Andrea Rice with citrus fruits: the golden bubbles tie everything together lightly.
  • MARCHETTI RICE SALAD —The first light that makes a scene: Organic Rosa Marchetti Rice with crunchy summer vegetables and a citronette prepared with the Organic Apple Dressing: the contrast between the black of the rice and the gold of the glass is served.
  • THE SUNSET TOAST — For outdoor dinners that don't want to end: Cold Colbotto as an aperitif and, when evening falls, a small glass of Certosa Mandarin Rosolio: the citrus fruits of the wine find their fragrant finish.
