Busiate are long, thin spirals reminiscent of rustic corkscrews, born from the practice of rolling the dough around a thin stem of ampelodesma (the "busa," hence the name). Bronze-drawing creates a rough, porous surface, ready to embrace the famous Trapani-style pesto and any other traditional Sicilian sauce. Slow drying at low temperatures fully preserves the grain's nutritional value, while the 7-minute cooking time ensures a perfect seal and a delightfully tender al dente texture.
Busiate are the symbol of Trapani cuisine: their name derives from the Sicilian "busa," the stem of the ampelodesma (a wild grass typical of the Sicilian coast) used to wrap the pasta and create its characteristic spiral shape. This technique, likely imported by the Arabs in the 9th century along with durum wheat, has survived for over a thousand years in the patient hands of housewives in Trapani, Erice, and the Aegadian Islands.
