Not all butters are the same, and one taste is enough to understand it. This Organic Butter is made from raw Italian cow's milk cream left to ferment naturally before churning: it's the traditional method, what the French call barrel- churned butter alive. and which in Italy was practiced on every farm before the advent of the industrial centrifuge. The fermentation of cream develops aromas unmatched by sweet butter: a lively lactic note, a scent of hazelnut and sour cream, a rich and creamy texture that slowly melts on bread and in the pan. A simple ingredient made properly, with only one ingredient on the label.
Butter is one of the oldest processed foods we know: traces of it can be found in Sumerian bas-reliefs from five thousand years ago, where shepherds churn milk in leather bags hung on tripods. In Alpine and continental Europe, the churn became the quintessential household tool, and butter became the way to preserve the richness of milk after milking. The secret of the dairy farms was precisely maturation: the cream rested for a few hours before being churned, the lactic acid bacteria worked, and from that waiting time the flavors were born. This waiting time has been eliminated by industry for reasons of yield and speed, but here it remains the heart of the process.
Butter made from fermented cream is naturally easier to digest than sweet butter: the lactic acid bacteria begin to break down the lactose during maturation, making it easier to digest. Being made from organic Italian milk, it retains the nutritional profile of the original milk: fat-soluble vitamins A, D, E, and K2, butyric acid—valuable for intestinal mucosal health—and short-chain fatty acids. Like all fats, it should be used sparingly, but in the right amount, a good artisanal butter is preferable to many industrial alternatives rich in refined oils and additives: just a few grams, but real.

Store in the refrigerator below 4°C, in its packaging or in a closed butter dish, away from strongly scented foods: butter easily absorbs odors. It can be frozen, preserving its organoleptic properties. For best spreadability, remove it from the refrigerator about ten minutes before serving.
The product arrives vacuum-packed to ensure its freshness. Slight weight variations are possible due to the artisanal processing that preserves the integrity of the product.
