To produce a single wheel of Parmigiano Reggiano of 38-40 kg, about 550 liters of milk are needed.
The processing of Parmigiano is strictly regulated by the DOP disciplinary.
The production of Parmesan starts early in the morning, the freshly milked milk is combined with that of the evening milking the day before, which had time to rest and skim naturally.
The two milks are poured into copper boilers in the shape of an inverted bell, where the milk coagulates following the addition of calf rennet and whey (residue from the previous day's cheesemaking, very rich in lactic ferments essential for production. of cheese).
Once the curd is formed, it is fragmented into small pieces with the help of an ancient tool called a spino.
The broken curd is then heated until it reaches 55 ° C, the temperature at which the curd, now cooked, precipitates to the bottom of the copper boiler.
After about fifty minutes of rest, the mass is extracted by the cheesemaker and placed first in a cloth and then in the mold that will give it its final shape.
The wheel is then immersed in a solution of water and salt, within which about a month will pass, so as to be ready for its long maturing process.
Parmigiano Reggiano must age at least 12 months before being marketed, but it is from 24 months of aging that it reaches the apex of quality and taste.
About 1500 wheels are produced with the milk of our cows in one year.

To ensure the highest possible quality to our customers, in 2012 we decided to certify the "NUOVA" Social Dairy of Bibbiano (RE), of which we are members, for the cheese-making and seasoning of Organic Parmigiano Reggiano.
As evidence of the quality of the product, in addition to the organic certificate, starting from 2018 we have obtained the certification for the exclusive production of HAY MILK STG (traditional specialty guaranteed).
The company is equipped with photovoltaic systems that allow you to benefit from the greatest possible energy from the sun, reducing the consumption of energy produced by fossil materials.
Il milk comes exclusively from cows born and raised on our farm and fed on pasture with forage free of fertilizers and chemical pesticides. We respect the natural maturation times of the animal and use, if necessary, only homeopathic or phytotherapeutic treatments.
A small family-run business, located in the upper Parma Apennines. In 1978 Giuliana and Remigio decide to continue the family tradition.
As a wedding gift they receive 14 cows and a piece of land. With perseverance, love and hard work, they develop an activity of breeding and production of organic milk and dairy products.
Today the company has 130 dairy cows and an area of 30 hectares of woods, land and meadows. The parents were joined by the children: Giovanni, Davide, Lucia and Barbara.
