Otani Organic Tofu and Zucchini Cream

Of the company's three tofu spreads, this is the gentlest. The zucchini doesn't impose its own character like the broccoli, nor does it carry the smoky undertones of the eggplant: they add freshness, a subtle vegetal sweetness, and a particularly silky texture. The result is a light and creamy spread, discreetly flavored with shoyu, capers, wine vinegar, and extra virgin olive oil, with 70% tofu providing structure and substance. This version is a winner even for those new to tofu, and the one children love the most. All ingredients are organic, processed and packaged by hand, with no added thickeners or preservatives.
 
 
 

The roots of this cream are found in a flower picked before it blooms.

Among the ingredients are capers, and it's worth knowing what they really are: not fruit or berries, but flower buds picked before they open. The caper plant grows clinging to drystone walls, rocks, and cliffs, in places where nothing else would take root, and blooms incredibly quickly: each bud lasts a few hours, so the harvest is done by hand, at dawn, one piece at a time, every day for weeks. Freshly picked, capers are bitter and inedible; it's the months-long maturation in salt that transforms them through a slow fermentation that develops that pungent, unmistakable aroma. In a delicate cream like this, they play a precise role: just a few capers provide contrast and liven up the whole, preventing the softness from becoming monotonous.

Tofu provides complete plant-based proteins, with all the essential amino acids, along with calcium, iron, and magnesium, the latter also bound to the nigari used for coagulation. Food container

Store in the refrigerator and consume within a few days of opening, always scooping out the tofu with a clean, dry spoon. Since this is an artisanal product made with fresh tofu and contains no preservatives, it should be kept refrigerated at all times.
