Lettuce is an angiosperm, dicotyledonous plant belonging to the Asteraceae family. In the Italian colloquial language it is often, and erroneously, called salad, being often part or main ingredient of the homonymous dish.
It is used as a side dish and as a garnish for meat and fish dishes; or alone accompanied with other vegetables or aromatic herbs. Since the vinegar tears the leaves, it is recommended to season it with lemon.
For 100 grams of edible part, the composition is as follows:
A lot low in calories, it is rich in mineral salts (especially potassium, calcium, phosphorus, magnesium, copper, iron and zinc) and vitamins (primarily vitamin A, but also vitamins of group B, E, K, C and J). The darker leaves are rich in folic acid, vitamin B9, carotenoids (especially beta-carotene).
