Arteagricola's Organic Senatore Cappelli Gnocchetti pay homage to the great tradition of Sardinian gnocchetti (malloreddus), reinterpreted with the nobility of 100% self-produced Senatore Cappelli durum wheat grown on the farm's fields. The small, ridged shape—10mm long and 5mm in diameter—is designed to hold the perfect amount of sauce in every bite, while the bronze-drawn process creates the signature rough surface that embraces every sauce. Slow drying at below 32°C preserves the grain's aromatic and nutritional value, resulting in a pasta with the intense aroma of ripe wheat, freshly baked bread, and fresh flour. Cooking for just 8-10 minutes, the gnocchetti maintain a perfect al dente consistency, perfect for both traditional recipes and contemporary interpretations.
 
 
 

The roots of these Gnocchetti are deep in tradition

Gnocchetti, in their most iconic form, represent one of the oldest and most distinctive pastas of the island of Sardinia: "malloreddus" (literally "little calves" in the Sardinian language) have been documented since the 14th century and were shaped by hand, over a wicker basket, to create their characteristic ridges. In Sardinian cuisine, they are traditionally seasoned "Campidanese-style" with sausage, tomato, and saffron sauce. Their small size and ridged shape have made them a popular shape throughout Italy, prized for their ability to capture thick, full-bodied sauces. Arteagricola reinterprets this regional heritage by combining it with Senatore Cappelli wheat, selected in 1915 by Nazareno Strampelli, a symbol of Italian grain excellence in its closed, integral supply chain using water from the Sele spring.
