Pecorino canestrato with white and compact texture with kid's rennet aged in caves
Aged cheese obtained from raw whole sheep's milk with the addition of lamb rennet.
The forms are sprinkled with olive oil and turned manually once a day.
Seasoned in a tuff cellar at a temperature of 12° on olive wood tables, for a period ranging from 30 to 90 days maximum.
In 2011, evaluated by 13 ONAF (National Organization of Cheese Tasters) tasters, it won the Rome Award as runner-up in the “Matured Pecorino” category.
Excellent for aperitifs, in sticks or flakes, enhanced by honey with a delicate taste and Tropea onion marmalade; or from the wonderful salami and hams of the Italian tradition.
