The Tenuta Tinte Rosse farm is specialized inherd of Maltese goats for the production of milk and cheese.
The Maltese goat produces a smaller amount of milk, but with higher fat and protein content compared to breeds of alpine origin (Saanen and Camosciata delle Alpi), mainly imported from France.
In the milk of the Maltese breed the smell and taste of ice are moderately present and this characteristic predisposes them favorably to the production of high quality milk and yoghurt.
The breeding is of the "semi-stabulated" type, with constant access of the animals from the stable to the pasture and to the external paddocks, in full compliance with current national and international legislation on animal welfare.
Goats can enjoy aspecific shelters and are free to graze in large fenced areas, the diet is based on hay from the surrounding area and feed mainly composed of NO-GMO protein-arginous substances.
Milk produced on the farm it is pasteurized and bottled in one-litre or half-litre bottles.
The milk intended for the production of cheeses is always pasteurized and added with starter milk produced in the dairy. Only in some cases are freeze-dried ferments used.
Salting is always done dry.
The cheeses are produced exclusively in the company dairy with goat's milk produced on the farm.

-Fresh cheeses: ricotta cheese, robiola (Margherita), cacioricotta (Flacco Oratio Quintus);
Lightly seasoned soft cheeses (Flacchus);
-Semi-mature cheeses (Horace), for which the company won the Rome prize; seasoned cacioricotta (Quintus);
- Aged cheeses (Ulysses), table or to grate.
