Achille Organic Brown Carnaroli Rice is Tenuta San Carlo's first whole grain Carnaroli rice: grown in Maremma according to certified organic methods and handcrafted in stone mills, it preserves the large grain of the king of rice in its entirety, with its entire outer layer and a bold, full, wild flavor. It's perfect for salads and soups, or as a first course simply drizzled with a good olive oil: savoring it brings out the soul of the Maremma, uncontaminated and natural. Slow and generous cooking, 40-45 minutes, rewards with a firm and satisfying texture. The name on the package is that of Achille, the great-grandfather: the founder, the origin of everything.
Visionary. Engineer. Great-grandfather. In 1936, when Maremma was still synonymous with swamps, mosquitoes, and frontiers, Achille Gaggia—who came from the northeast—looked at those expanses of water and reed beds and perceived what no one else saw: the uniqueness of this place. It was a time when all of Italy regarded land reclamation as the great undertaking of the century, but Achille brought the vision of an engineer and the heart of a pioneer, founding Tenuta San Carlo and planting the seeds of four generations. Dedicating wholegrain Carnaroli to him—rice in its most authentic and least domesticated form—is a perfect tribute: like the Maremma he chose, this grain retains its wild nature intact.
Whole grain Carnaroli combines the nobility of the king of rice with the richness of the whole grain: precious fiber for satiety and intestinal regularity, B vitamins, magnesium, phosphorus, and the antioxidant compounds of the pericarp, which are lost during refining. Its lower glycemic index compared to white rice provides gradual and constant energy, and it is naturally gluten-free. Stone-ground processing treats the grain with respect, while the certified organic supply chain of the Maremma—with its rotations of legumes and ancient grains that nourish the soil—guarantees clean rice, free from harmful chemicals. Tenuta San Carlo is an organic farm founded in 1936 by Achille Gaggia in Grosseto, in the heart of the Maremma. Today, his great-granddaughters cultivate rice, ancient grains, and legumes in rotation, amidst pine forests and grazing Maremma cattle, dedicating each variety of rice to a different family member.
