Biofavole's Organic Artichokes in Oil are a small masterpiece of Italian peasant preservation: organic artichokes hand-picked from the family gardens of Ortezzano di Fermo, in the rolling hills of the Valdaso valley in the Marche region, preserved in a simple solution of water, organic white wine, organic white wine vinegar, and salt. A family recipe passed down by mother-in-law Maria, guardian of Biofavole's recipes, enhances the artichoke without masking its flavor with fatty oils or invasive aromas. All ingredients are strictly organic, and every stage of the process—from harvesting to preservation to packaging—is carried out by hand by the company's laboratory staff, in full keeping with the brand's artisanal philosophy. The result is a crunchy and delicately flavorful side dish, a preserve that preserves the artichoke's vegetal character intact without masking it with heavy seasonings.
The artichoke has an ancient and noble gastronomic history: native to the Mediterranean basin, it was domesticated in ancient Egypt and classical Greece as "kynara," the "cultivated cardoon" beloved of Pythagoras and Heraclitus. Apicius, in his "De Re Coquinaria" from the 1st century AD, dedicated numerous recipes to the artichoke for preserving it "in vinegar and salt," a fundamental technique for consuming it during the winter months. During the Renaissance, Catherine de' Medici brought it to the French court, making it a symbol of aristocratic cuisine. In the Marche countryside, where the artichoke has been popular since the 16th century, every peasant family had its own recipe for "carciofi sott'aceto" or "al naturale": preserving it in white wine and vinegar was considered the noblest, as it enhanced the crunchy texture of the artichoke heart without altering its flavor. Biofavole inherits this traditional wisdom, translating it into a contemporary organic product that preserves the traditions of Italian grandmothers intact.
