Made with 100% Senatore Cappelli durum wheat semolina grown on the company's own fields, they are 23mm long and 4mm in diameter. Bronze-drawing ensures the classic rough, porous surface that holds every sauce, while slow drying at below 32°C preserves the grain's aromas and nutrients. The 11-13 minute cooking time keeps both shapes al dente, creating a play of textures and concavities that makes every forkful a varied and enjoyable experience, the star of great Southern Italian recipes.
 
 
 

The roots of these Maritati are deep in tradition

"Maritati" (little pasta) are one of Southern Italy's most poetic culinary traditions: their name derives from the symbolic "marriage" between two different pasta shapes, a union that celebrates the encounter and harmony of different shapes. In Puglia and Basilicata, serving "maritati" at weddings was a wish for lasting union and prosperity, while in other parts of the South, they were the Sunday dish that brought large families together. The combination of orecchiette and cicatelli is no coincidence: the former, domed, contain the sauce inside, while the latter, elongated, collect it in the hollow—a perfect system for capturing every nuance of the sauce.
