This sauce highlights the extraordinary quality of the meat: a full 55% of the jar is made from organic "large cows," born and raised on pasture on the farm just outside Rome. The absence of tomato allows you to fully appreciate the natural sweetness of the grass-fed beef and the delicate aromas.
The recipe is a masterful balance of simple, wholesome ingredients. The meat is browned in a sauté of organic vegetables (celery and onion) and Solaria Extra Virgin Olive Oil, then slowly cooked with the addition of organic milk, which lends an irresistible creaminess. The aromatic bouquet, enriched with rosemary, bay leaves, and garlic, creates an intense, rustic aroma. This ready-made sauce is dense, nutritious, and incredibly flavorful, the result of biodynamic farming that respects the land and animals.

The roots of this White Ragù are deep in tradition

Ragù bianco is a historic condiment in Italian cuisine, often predating the arrival of tomatoes in our daily diet. It's a celebration of meat in its essence, where slow cooking in milk or broth served to soften the fibers and create a velvety sauce.
Solaria interprets this tradition by using meat from adult animals (large cows), which has a more robust and mature flavor than veal.
