This bean-to-bar chocolate represents the pinnacle of Katya and Armin's artisanal creativity, balancing complex ingredients to create a taste experience that surprises, captivates, and conquers even the most discerning palates.

Single-estate Belizean cacao from the rainforests of Toledo, where the ancient Trinitario and Criollo varieties grow in the shade of centuries-old trees following traditional Mayan agroforestry practices, is fermented and dried with meticulous care by Belyzium, which has perfected excellent post-harvest protocols. Once the beans arrive at the Karuna laboratory in Alto Adige, they are delicately roasted to develop notes of tropical fruit, toasted hazelnut, and caramel without burning the delicate floral aromas. They are then stone-ground for days during the long conching process, refining the texture, making it as silky as liquid silk. At this point, Fair Trade raw cane sugar, pure organic cocoa butter, and the signature ingredients are added: generous cubes of organic candied orange (15%) handcrafted with fructose syrup, cane sugar, and lemon juice that provide a balance between sweet and sour, and a calibrated dose of ground Timut pepper (0,04%) which may seem like little but is enough to completely transform the flavor profile.

The result is a chocolate with a bold yet elegant character: at first bite, you can taste the noble bitterness of the 70% dark chocolate, immediately followed by the fruity-citrus explosion of candied orange, adding sweetness and a slightly chewy texture. Finally, the Timut pepper surprises with its floral-citrus aroma, followed by a delicate spicy hint, creating an almost sparkling effect on the palate that cleanses and invigorates, inviting the next bite. The complexity is such that each taste reveals different nuances: notes of toasted cocoa, exotic tropical fruits, candied citrus, orange blossoms, and pink pepper, with a long, clean, and satisfying finish. The roots of Belizean cocoa lie in the ancient Mayan civilization.

Belize, a small Central American country overlooking the Caribbean Sea and bordering Mexico and Guatemala, boasts one of the world's oldest and most fascinating cocoa histories. This land was the heart of the great Classic Maya civilization (250-900 AD), where cacao (called kakaw in the Mayan language) was not simply a food but a sacred element central to cosmology, religious rituals, economics, and social life. The Maya cultivated cacao in the southern rainforests, particularly in the Toledo region, where descendants of the ancient Criollo varieties, considered the most genetically prized for their aromatic finesse and complexity, still grow today.

Archaeologists have discovered residues of theobromine (a characteristic alkaloid of cocoa) in Mayan ceramic vessels dating back to 600 BC, demonstrating that the Maya were already consuming cocoa-based beverages 2600 years ago. They were likely prepared by mixing ground cocoa with water, chili pepper, vanilla, corn, and other spices, creating a frothy, bitter drink very different from modern sweet chocolate. Today, the Toledo Cacao Growers Association (TCGA) and companies like Belyzium work with hundreds of small-scale Mayan farmers who grow organic cacao in traditional agroforestry systems called "milpas," where cacao grows alongside corn, beans, bananas, avocados, timber trees, and medicinal plants, recreating the biodiversity of the natural forest. This approach protects heirloom varieties of Criollo and Trinitario cacao with high genetic value, sequesters carbon, preserves habitats for threatened wildlife such as jaguars and tapirs, and provides decent incomes to communities who have been custodians of this sacred plant for millennia.
