Ammano's Organic Grangessato is an extraordinarily complex cheese, designed for lovers of bold, structured flavors. It is the result of a unique and patient production process: the curd, obtained exclusively from organic raw milk, is extracted and left to mature in whey for three days. This crucial phase prepares the curd for the subsequent breaking (pasta rotta) and shaping, creating the irregular structure essential for the natural development of the blue veining.
Over time and through long aging, the cheese evolves and transforms. The texture, initially firm and "chalky" (hence the name), becomes creamy and streaked with the characteristic blue-green veins of noble mold. On the palate, Grangessato offers an explosion of flavor: spicy and pungent notes alternate with hints of undergrowth, mushrooms, and melted butter, in a perfect balance guaranteed by the high-quality raw milk of Italian origin.

The roots of this blue cheese are deep in tradition

The "broken curd" technique and maturation in whey hark back to ancient methods, when cheesemaking followed the slow rhythms of nature rather than the frenetic pace of industry. The blue marbling, once discovered almost by accident thanks to the spontaneous growth of mold in the hollow spaces of the curd, is here expertly crafted and controlled.
Ammano celebrates this rural heritage, transforming the milk from its own herd into a cheese that tells the story of the land. Each wheel is unique, the result of a symbiosis between man, animal, and environment, where the cheesemaker's hand guides nature without forcing it.

Choosing Erborinato Grangessato means taking care of yourself

The raw milk used for Grangessato preserves the vitamins, proteins, and enzymes of fresh milk, which are often lost during pasteurization. The noble molds that characterize the blue cheese (Penicillium genus) also perform a proteolytic function, breaking down proteins and making the cheese surprisingly digestible despite its complexity.
Choosing an organic product also means avoiding the ingestion of unwanted chemicals, enjoying only the nutritional power and authentic taste of a living food, rich in natural lactic ferments.
