Poggio Felicioso Lard Cream is the spreadable essence of wild pork: lard from pigs born and raised 100% free-range in the Tolfa mountains, finely blended with salt, chili pepper, and marjoram until it becomes a soft, fragrant cream. Here, fat isn't just any ingredient; it's the star, and the difference is noticeable: the animals roam free year-round, fed organic grains and never treated with antibiotics, resulting in a sweet, aromatic lard that's never cloying. Lard is the food that built the Italy of toil: in Colonnata, among the marble quarries of the Apuan Alps, the quarrymen cured it in the famous marble basins with herbs and spices, making it the fuel for their long days among the white blocks.
