Jerusalem artichoke, also called Canadian truffle or perennial sunflower, is a plant of the Asteraceae family, whose species belongs to the same genus as the sunflower. 

It is grown for its large yellow flowers as a decorative plant and for its edible tubers.

With its little chestnut flavor, Jerusalem artichoke makes you want to eat it, but it often discourages you and seems a little complicated to cook.

Ingredients

 

Recipe preparation procedure

  1. We clean the Jerusalem artichokes and cut them coarsely. 
  2. Cut the onion into cubes.
  3. Add the oil to a saucepan and sauté the onion and Jerusalem artichoke until golden brown
  4. Pour in some water (so that the Jerusalem artichokes are submerged, no more).
  5. Add a cube of vegetable broth and cook until the Jerusalem artichoke becomes soft.
  6. We mix with an immersion blender until obtaining a soft consistency, we soften with the cream.
  7. Season with crushed garlic, salt and pepper
  8. Serve alone or with croutons.
