The Roots: Three Decades of Authentic Organic Farming in the Marche Region

Salvia is born in an area with a strong agricultural vocation: thehinterland of Macerata, a land of ancient cereal crops and peasant agriculture that has spanned the centuries with the patience of good crafts. Tolentino —ancient Roman city already known as Tollentinum, famous in history for the Treaty of Tolentino of 1797 between Napoleon and the Papal State — is today a agri-food hub of the province of Macerata, located in the fertile Chienti valley, at the foot of the Apennines. Here Materviva developed its project, building in the three decades of activities a network of selected farmers and artisans who share the same vision: certified organic production, valorization of ancient varieties and pure varietal lines, profound respect for ecological principles. A path that has grown gradually, far from passing fads, faithful to a long-term vision of the Italian agri-food industry.
 
 
 

Philosophy: Organic, Macrobiotic, and Harmony with Mother Earth

For Sage, Organic and macrobiotics are not passing fads but a way of being and living, in harmony with Mother Earth.. The macrobiotics is a food philosophy of Japanese origin — developed in the 20th century by Georges Ohsawa starting from ancient oriental dietary traditions - which is based on Taoist principles of yin-yang balance applied to food. Prefers Whole grains (rice, millet, barley, buckwheat), seasonal vegetables, vegetable, seaweed, seeds and dried fruit, in balanced and variable proportions according to the season and individual needs. Sage recipes are inspired by the millenary principles of macrobiotics: simplicity, balance, and the enhancement of natural flavors without excessive processing. The Salvia supply chain: safe, controlled, in four phases

In addition to organic certification, Sage supervises the entire production chain, from the raw material to the finished product, guaranteeing the absence of synthetic chemical substances (pesticides, herbicides) and limiting the use of plant protection products although allowed in organic farming. The supply chain is divided into four stages:

1) Agricultural production: motivated farmers in suitable areas, with particular attention to cultivation practices - from the variety of the seed (preference for ancient varieties and pure varietal lines) to the judicious use of pesticides and fertilizers. Farmers are encouraged to practice polyculture —an approach that alternates different crops on the same land, as opposed to industrial monoculture.

2) Transformation: artisans and companies selected for care and attention, collaboration on unique and simple recipes according to the motto Salvia “Fewer ingredients, more value".

3) Packaging: maximum care in the final phase — storage in temperature-controlled environments, packaging in ATM (Modified Atmosphere) to preserve the organoleptic qualities, CO2 treatment for cereals, legumes and oilseeds (natural preservation technique that avoids chemical preservatives and insect infestations).

4) Distribution: “from the field to the table” — products recognizable by theTransparent Label, distributed through e-shops, specialized organic shops and minimarkets, retail and HoReCa channels.

 

Polyculture: Agriculture of the Future Looking to the Past

Il agronomic heart of the Salvia project is the Polyculture: an agricultural practice that alternates or combines several crops on the same land, in stark opposition to industrial monoculture (which impoverishes the soil, reduces biodiversity and requires massive doses of pesticides). Polyculture is actually a ancient tradition of Italian agriculture: our grandparents practiced it in the “mixed field"farmer — vineyard + olive trees + vegetable garden + wheat + fruit on the same farm — a multifunctional model that was dominant until the 50s, later replaced by the productive specialization of the economic miracle. Sage encourages the return to polyculture including solution to the major contemporary environmental problems: soil impoverishment, desertification, waste of water resources, deforestation, reduction of agricultural biodiversityA courageous choice that requires farmers to work harder and have more skills than industrial monoculture, but which gives back living lands, more nutritious products, healthy ecosystems.

The Transparent Label is the hallmark of Salvia products: a communication system that guarantees the consumer full traceability, clarity on ingredients e safety in the supply chainQuality controls — one of the most important aspects of the Salvia philosophy — are extended to the entire supply chain and carried out on a sample basis on:

  • Cultivation lands (soil sampling)
