Try reading the label of a commercial cracker, then read this: flour, extra virgin olive oil, sunflower seed oil, flavoring, and salt. Nothing else—no hydrogenated fats, no syrups, no preservatives, or synthetic leavening agents. Zampa Crackers are made in the open-view laboratory in Tuscolano using type 2, semi-whole wheat flour, which retains part of the bran and germ: this is what gives them that slightly amber color and a real wheat flavor, much deeper than that of a cracker made with refined flour. They are available in several flavors: Rosemary, aromatic and Mediterranean, and Tomato, sweet and savory at the same time. Crispy, crumbly, made to be eaten.
Before becoming a snack, the cracker was a necessity: a simple dough, baked twice or at least dried until it lost all traces of moisture, because without water there is no mold and the product lasts for months. It's the same logic as sailors' biscuits, unleavened bread, friselle, and the travel biscuits that accompanied caravans and armies. The English name cracker It comes from the sound it makes when you break it—a detail that speaks to how crunchiness has always been its defining characteristic. In the twentieth century, industry transformed that essential product into something much more complicated, with ingredient lists a dozen lines long. Going back to making it in an oven, with flour, good oil, and salt, simply means returning the cracker to what it was: bread, in another form.
Type 2 soft wheat flour is semi-whole wheat: compared to type 00, it retains a higher amount of fiber, minerals, and B vitamins, contained in the outer parts of the grain that are removed by advanced refining. The fats used are exclusively high-quality vegetable fats—extra virgin olive oil and sunflower seed oil—without a trace of hydrogenated or palm oils, and the complete list of ingredients is limited to just five. A basic product, suitable both as a base for savory snacks and as a crunchy alternative to bread at the table, with the added satiety that the fiber of type 2 flour provides.

Store in a cool, dry place, away from light and heat. Once opened, reseal the package tightly or store the crackers in an airtight container: humidity is their only enemy and quickly compromises their crunchiness. If they soften, a few minutes in a hot oven will bring them back to crispiness.
