These are green olives that are tanned with a traditional method that enhances their fresh and aromatic flavor.

How they are prepared

The Aeolian Green Olives are produced using ripe green olives, which are harvested by hand and then subjected to a brine.

The olives are immersed in water and salt for a variable period of time, depending on their size and the desired result. During brine, the olives lose some of their initial bitterness and soften slightly.
