The Sour Cherry Jam of La Selva

La Organic Extra Sour Cherry Jam di La Selva is one of the most sought-after and distinctive preserves of the Cellenese farm: made with an exceptional 80% wild sour cherries — a very high percentage which legally qualifies it as “extra jam” According to European regulations, each jar captures the aromatic intensity of Tuscia's most tart and noble fruit. The recipe is radically simple: organic sour cherries, fructose, a small addition of sugar, sour cherry juice to amplify its aroma and lemon juice as a natural thickener. Vegan, naturally gluten free, without industrial pectins or added preservatives. The color is deep ruby, the flavor intense, sweet and tart, and deeply aromatic.

The roots of the Visciola are deep in the woods of central Italy

La sour cherry (Prunus cerasus var. austera) and the wild sour cherry par excellence, a native Italian variety that grows wild in the woods and hedgerows of central Italy, from Lazio to Marche to Umbria. Distinguished from the sweet cherry by its more decisive, aromatic, and slightly bitter flavor, the sour cherry was already celebrated by Romans, who called her cerasum acidum and they used it extensively in fruit preserves. Middle Ages, in the courts of the Viterbo counts and in the monasteries of the Papal States, the sour cherry became a precious ingredient in liqueurs (the famous "visciole wines"), jams and banquet sweets. Its production has become rare today: few companies like La Selva They continue the organic cultivation of native sour cherries, preserving the ancient varietal biodiversity of the Celleno area.

Choosing Sour Cherry Jam means choosing anthocyanins in high concentration

This jam is a treasure chest of concentrated natural nutrients. 80% fruit guarantees a density of nutrients typical of the sour cherry: in particular very rich quantities of anthocyanins (the ruby-purple pigments with documented antioxidant and anti-inflammatory action, particularly abundant in sour cherries compared to sweet ones), quercetin, Vitamin C, polyphenols e fibers. The sour cherry is also one of the very few foods that contains natural melatonin in significant concentrations — an ally of physiological sleep. Numerous studies have shown that regular consumption of sour cherry/sour cherry-based products can promote muscle recovery in athletes, to counteract the symptoms of gotta and contribute to cardiovascular health. A jam suitable for the whole family, vegan and gluten-free.

How to Best Use: Organic Extra Sour Cherry Jam

  • SOUR CHERRY TART: THE FLAGSHIP DESSERT OF LAZIO TRADITION
The noblest way to enjoy this jam is also the most rooted in the tradition of Tuscia: the sour cherry tartRoll out a shortcrust pastry base in a baking pan, fill with a generous layer of Sour Cherry Jam, decorate with the typical braided strips and bake at 180°C for 30-35 minutes. Serve while still warm with a dusting of powdered sugar and a scoop of vanilla ice cream: a Sunday dessert from Lazio-Marche cuisine, best accompanied with a glass of Maraschino of Sour Cherries of La Selva itself for a perfect philological experience.
  • GOURMET PAIRINGS WITH BLUE AND AGED CHEESES
The strong acidity of the sour cherry makes it the aristocratic complement to hard cheeses and blue cheesesServe it on a cutting board next to the Organic Mountain Parmigiano Reggiano DOP 24 months, Falisco Aged Pecorino, Velabro Smoked Goat Cheese or a top-of-the-range blue cheese. The tart sweetness of the sour cherry cuts through the fatty saltiness of the cheese, creating a balanced flavor worthy of great tasting. Also try it as an accompaniment to Artisanal Capocollo or Raw Mountain Ham from Tuscia: the Italian elegance of sweet and savory.
  • BREAKFAST, YOGURT AND SAUCES FOR GAME AND DUCK
At breakfast, the Sour Cherry Jam expresses all its aromatic power: spread it on a slice of Rye bread in a loaf pan toasted and butter, or mix it with one Organic Farm White Yogurt with a few oat flakes. For a more sophisticated savory dish, briefly reduce it in a pan with a drop of balsamic vinegar to obtain a sour cherry sauce ideal accompaniment for duck roastedVeal tagliata or braised wild boar: a Lazio reinterpretation of the great French tradition of “sauces aux cerises”.
