Poggio Felicioso's Organic Corallina Salami is a tribute from wild pork butchers to the most Roman of salamis: 100% pork meat from pigs born and raised in the Tolfa mountains, finely minced and dotted with characteristic lardons, seasoned with salt, pepper, and garlic according to the traditional recipe, then cured with artisanal patience. The animals are raised in the wild, fed organic, GMO-free feed, never treated with antibiotics, in a short, entirely Italian, CCPB-certified supply chain. The sweet, fragrant wild fat gives this corallina a softness and rounded flavor that distinguishes it from the first bite.
In Rome, Easter isn't Easter without corallina: for centuries, this tapered salami has been the undisputed king of the Roman Easter breakfast, the morning table that after Lent brought families together around blessed hard-boiled eggs, cheese pizza, and generous slices of salami. Its name derives from "corallo," the natural casing in which it is traditionally stuffed, or—according to others—from the bright red color of its slices. Historically produced in the Lazio countryside by pork butchers who came down from the mountains, it was the salami that began to be cut on Easter morning and which, in Roman homes, never arrived whole on Easter Monday.
Natural curing is an ancient form of culinary wisdom: it concentrates the meat's nutrients, making salami a generous source of complete proteins, highly bioavailable iron, zinc, and B vitamins, essential for energy and the nervous system. In free-range pigs, exercise and a diet based on organic grains improve the quality of the fat, resulting in a more balanced and aromatic product. The absence of antibiotics in the farm and CCPB organic certification guarantee a controlled supply chain at every stage: a traditional pleasure to be savored with the knowledge that only the best is available.
In the Tolfa mountains, Poggio Felicioso combines free-range breeding with the art of pork butchering: over 300 free-roaming pigs, farm-grown grains, and a closed CCPB-certified organic supply chain, where each cured meat is crafted with a profound respect for the animals.
