Turmeric's treasure is called curcumin: the pigment that gives it its golden color is among the most studied plant compounds in the world for its antioxidant properties and its traditional use in supporting digestive and joint function, a valued asset in Ayurveda. The fresh root also provides volatile essential oils that the powder loses when dried. A traditional tip confirmed by science: always pair it with ground black pepper and a healthy fat like olive oil—the piperine and lipids significantly enhance its absorption.
Store the root in the refrigerator, wrapped in paper towels in a bag, where it will stay fresh for 2-3 weeks. To have it always ready, freeze it whole: it grates perfectly from frozen, directly onto the plate. Be careful with your hands and cutting boards: its gold color stains everything it touches—a glove is welcome.
