The Mayans called it the "tree of life" and revered it for its nutritional and healing powers; when Christopher Columbus tasted it in the Americas, he was so captivated that he dubbed it "the fruit of the angels." Since then, papaya has traveled the world along the sea routes, conquering every tropical region on the planet. Its most recent and surprising chapter, however, is being written in the Mediterranean: in southern Sicily, where the climate has opened its doors to this tropical queen, the most courageous growers have demonstrated that the fruit of the angels can have Italian citizenship—from kilometers, not oceans, away.
Papaya is the perfect ally for those who enjoy eating with gusto: its characteristic enzyme, papain, aids protein digestion, so much so that in tropical cultures it is traditionally served at the end of a meal. Its generous dose of vitamin C supports the immune system and the production of skin-friendly collagen, while the carotenoids that give it its orange color work as antioxidants alongside vitamin E. With its potassium, magnesium, and delicate fiber content, and the low calories of its water-rich pulp, it is a natural dessert that pampers without weighing you down.

If the papaya is still firm, let it ripen at room temperature for a few days: it's ready when the peel turns yellow-orange and yields slightly to pressure. Once ripe, store it in the refrigerator and consume within 2-3 days. Cut in half, remove the seeds, and cover with plastic wrap. Remember to enjoy it not too cold to fully appreciate its tropical aroma.
