This Melech Puglia Bianco IGP is an organic orange wine made from pure Greco Bianco grapes, vinified as a single varietal to fully express the character of this noble grape. Macerated on its skins with indigenous and wild yeasts, unfiltered and unclarified, it displays a warm amber color. Unlike the version blended with Malvasia, this single-variety interpretation reveals a fresher and more delicate profile, with herbaceous and exotic fruit notes and a refined acidity. The grapes come from our own vines grown using natural methods in the Lama Baronale area, on tuff and calcareous-clayey soils in Adelfia. Fermentation is spontaneous and uncontrolled. VinNatur-certified and organic, it is a new flavor born from ancient grapes, created by winemaker Giorgio Nicassio.
Greco is one of Southern Italy's oldest and most fascinating grape varieties, and its name betrays its origins: it was introduced to the peninsula by Greek colonists from Magna Graecia over 2,500 years ago, along with Hellenic viticultural expertise. Cultivated for centuries in Puglia, Campania, and Calabria, it has adapted to the volcanic and calcareous soils of southern Italy, expressing extraordinary minerality and aging potential. Vinifying it as a single varietal, using the ancestral technique of maceration on the skins, restores this historic variety's full identity and depth. The name "Melech," which in Hebrew means "king," celebrates the nobility of a regal grape. Cantina Giara thus revives a surprisingly new and authentic flavor from ancient grapes.
A wine produced through spontaneous fermentation using indigenous yeasts, macerated, unfiltered, and organically grown, represents a conscious choice for a more natural and authentic drinking experience. Maceration on the skins preserves and enriches the grape's richness of noble substances, giving this white wine a particularly high concentration of polyphenols and antioxidants. With just 59 kcal per 100 ml, it is also a low-calorie wine. Cultivation on tuff and calcareous-clayey soil, without synthetic products, guarantees a lively and authentic product. Any residues are natural and testify to the wine's authenticity; we recommend allowing it to aerate in the glass after transport. Consumed in moderation, it showcases a native grape variety with ancient origins.

It has a warm amber color, with the natural haze typical of unfiltered and unclarified wines. Any residue on the bottom is completely natural and testifies to the authenticity of the product.
On the nose, herbaceous and exotic fruit hints open up, in a fresh, fragrant and inviting bouquet, an expression of the natural aromatics of Greco vinified in purity.
On the palate, it's voluminous yet fresh, with a delicate and balanced acidity that supports its drinkability. The palate is full and harmonious, with a fruity finish—a new flavor from ancient grapes.
A fresh and delicate orange wine, it pairs perfectly with vegetables and vegetarian dishes, fish and seafood, and fresh and goat cheeses. Its gentle acidity and herbaceous notes make it versatile and pleasant, best served chilled.
Cantina Giara is a small, family-run winery in Adelfia, Puglia, led by winemaker Giorgio Nicassio. They practice exclusively biodynamic viticulture, using natural, spontaneous fermentation vinification without fining or filtration, and define themselves as "artisans of wine."
