Mix of organic young leaves: lettuce, spinach, lamb's lettuce, mizuna, rocket and other seasonal varieties
Tender, crunchy and colorful leaves, picked young when the flavor is most delicate: salad ready for every day

The Organic Baby Salad it's a mix of young leaves, collected when they are still small and tender: it is in this phase that the leaves are more crunchy, delicate and full of flavour, without the hard, fibrous parts of adult plants. The mix changes with the season and the harvest, and can include lettuce green and red, baby spinach, lamb's lettuce (the “songino”), mizuna, rocket salad and other varieties: each package is a little surprise of colors, shapes and flavors.
Each leaf brings its own character: the sweetness of baby lettuce, the softness of baby spinach, the nutty flavor of lamb's lettuce, the spicy and slightly peppery note of mizuna and arugula. Together, they form a balanced and complete salad, grown in organically grown products, ready to be seasoned with a drizzle of oil and used as a base for fresh, light and quick dishes.
The idea of mixing many different leaves is very ancient and entirely Italian. In the countryside of Rome and Lazio, the mixed saladA mix of wild and cultivated herbs, gathered in the fields and along ditches, which varied with the seasons. It is said that the Franciscan friars of the Aracoeli convent, on the Capitoline Hill, distributed these mixed salads of garden herbs to the poor, and that the faithful received them as gifts and signs of good luck.
The individual leaves of the mix then have stories from all over the world: the mizuna It is a Japanese cabbage, grown for centuries in the countryside of Kyoto, with jagged leaves and a slightly peppery flavour; lamb's lettuce, also called “lattughella” or “songino”, was the salad of European farmers in winter, because it grows even in the cold months; rocket salad It was already beloved by the Romans, who mixed it with lettuce. Baby salad is the modern version of this tradition: a mix of different leaves, picked at their peak.
Young leaves are among the lightest and most nutrient-rich foods: very few calories, lots of water and a great variety of vitamins e minerals. Baby spinach and lamb's lettuce bring folate, iron, and vitamin K; arugula and mizuna, which belong to the cabbage family, contain glucosinolates, protective compounds studied for their beneficial properties; the colorful leaves of red lettuce are rich in antioxidant anthocyanins.
