Biodynamic Ceylon Cinnamon Sticks from Les Jardins de Gaïa are one of the world's most prized and ancient spices. It is obtained from the inner bark of the Cinnamomum verum tree, removed from the shrub during the rainy season and dried. During this process, the bark naturally curls, forming its characteristic sticks. With a sweet, warm, and intense aroma, it is an essential ingredient in both sweet and savory dishes, alone or combined with other spices. This Demeter cinnamon comes from the SOFA (Small Organic Farmers Association) cooperative, which brings together small producers in the Kandy region, in the heart of Sri Lanka. A genuine spice, the result of biodynamic agriculture and fair trade.
Cinnamon is one of the oldest and most legendary spices in human history, known and sought after since antiquity. Mentioned in sacred texts and used by the ancient Egyptians in embalming, it was considered so precious that it was offered as a gift to kings and deities. For centuries, its provenance was jealously guarded by Arab merchants, who fueled its myth to keep its price high along trade routes. Ceylon cinnamon, native to Sri Lanka, is considered the most prized and delicate variety, with a more refined flavor than the more common Cassia cinnamon. Les Jardins de Gaïa preserves its legacy with a biodynamic and fair trade supply chain, certified Demeter and WFTO.
Cinnamon has always been prized not only for its aroma, but also for its health benefits. It is rich in antioxidants, particularly polyphenols, making it one of the spices with the highest antioxidant capacity. It is traditionally recognized for its beneficial effects on the metabolism and its pleasant digestive and warming properties, ideal during the cold season. The Ceylon variety, in particular, contains much lower amounts of coumarin than Cassia cinnamon, making it more suitable for regular consumption. Its biodynamic origin also guarantees a pure spice, free of synthetic chemical residues and processed with full respect for the plant and its growers.
