This Aged Balsamic Vinegar of Modena PGI is made according to the ancient Emilian tradition: only select, high-quality Italian grape musts are cooked over direct heat and then blended with the finest, well-matured wine vinegar before being aged extensively in fine oak barrels. The result is a balsamic vinegar with a syrupy consistency—approximately 1,34 in density—a dark, glossy color and a pleasantly sweet and sour flavor, delightfully aromatic, with excellent balance and structure. 100% natural, with no colorings, thickeners, preservatives, or caramels: the flavor is intense, fresh, and balanced, with a clean, aromatic, and lingering finish, perfect for enjoying throughout a meal.
The legend of balsamic vinegar has a precise beginning date: the year 1046, when—the chronicles tell—Marquis Boniface of Canossa, father of the famous Matilda, donated to Emperor Henry III, who was passing through Rome, a small silver barrel filled with that "lauded vinegar" produced in the lands between Modena and Reggio. Since then, for nearly a thousand years, Emilian vinegar producers have kept their sets of barrels in their attics, passed down from generation to generation as family heirlooms. It is within this history that Terra del Tuono fits in, a family-run vinegar producer in Corticella that since 1892—over one hundred and thirty years—has been patiently pursuing the art of cooked must and oak, on the same strip of land where it all began.
An authentic balsamic vinegar is a condiment as rich in flavor as it is simple in composition: only cooked must and wine vinegar, without added colorings, thickeners, preservatives, or caramels. Its intensity is an ally of light cuisine: a few drops are enough to give character to a dish, reducing the need for salt and fatty seasonings. Furthermore, wine vinegar has long been prized in the Mediterranean tradition for its digestive properties, while the polyphenols in ripe grapes survive the cooking of the must and aging. Choosing a 100% organic and natural PGI means bringing nearly a thousand years of expertise to the table, without industrial shortcuts.
Terra del Tuono is a long-standing family-run vinegar factory in Corticella, in the Reggio Emilia area. Since 1892, it has been producing one of the most authentic and traditional products of the Emilia region, Balsamic Vinegar. Alongside the Balsamic Vinegar of Modena PGI, it also produces the Traditional Balsamic Vinegar of Reggio Emilia PDO, and a range of balsamic condiments, from the most traditional to the most innovative.
