In this recipe we are going to make a delicious risotto with pesto from broccoli scraps
When cooking vegetables, we often throw away the less noble parts.
With this quick and easy recipe, we can reuse the less noble part of the broccoli to make a tasty pesto.

🥦Wash and clean the broccoli well and set the stems and leaves aside

🔪 Eliminate the hard outer part and cut the stems into pieces about one centimeter

🔥Boil a pot of water and cook the "waste" for about 15min (until tender)

💦 Remove with a skimmer, transfer them to a mixer and chop

🥣Add a handful of your favorite dried fruit, oil, parmesan, garlic (optional) and possibly a ladle of their cooking water to make the mixture creamier.

🍵 Blend until you get a smooth cream.
🧂Adjust salt and pepper to your liking
🌾Perfect for seasoning pasta, spelled and rice
❄️ It is possible to keep pesto in the refrigerator, in a glass container, for a couple of days.
