The story of Salafia Santo: the courage to plant tropical plants in Sicily
The Salafia Santo Farm is a Sicilian company specializing in the production and marketing of citrus fruits, fresh fruit, locally sourced vegetables, and traditional gastronomic specialties. But it was in 2015, in Marina di Ragusa, that the Salafia family made the decision that would make them unique: planting papaya on the Hyblaean coast, betting that the southern Sicilian sun could give this tropical fruit a Mediterranean home. The gamble paid off, and in 2019, the seal certifying the seriousness of their approach was also achieved: the organic certification issued by Ecogruppo Italia. Today, Salafia Santo is synonymous with exotic Italian fruit, grown where the African sea warms the air.
Papaya ripening on the tree
The secret of Salafia Santo's papaya lies in a privilege that imported papayas cannot: complete ripeness on the tree. Native to southern Mexico and Central America, this herbaceous perennial from the Caricaceae family has adapted magnificently to the subtropical climate of southern Sicily, where each individual fruit can reach full ripeness on the tree—while those that travel for weeks in the holds are harvested unripe. The result is a unique color and aroma, with all the nutritional and sensory properties preserved intact: tasting it means discovering, often for the first time, what a papaya really tastes like.

A concentrate of tropical well-being
Papaya is a natural apothecary: a source of water and energy-giving carbohydrates, it provides vitamins C, E, B6, thiamine, and niacin, along with iron, calcium, magnesium, and phosphorus. It is particularly rich in potassium—about 250-330 mg per 100 grams—which is essential for muscles and blood pressure. Its antioxidants, including vitamin C, vitamin E, and carotenoids, counteract the action of free radicals, while lycopene counteracts the oxidation of LDL cholesterol. Finally, the famous papain performs a proteolytic function that improves the digestion of proteins and amino acids, and its high vitamin C content makes it a naturally immunostimulant fruit.
