Primordio Primitivo PGI is Cantina Giara's flagship red wine, made from 100% Primitivo grapes grown in the Jazzo di Stefano area of ​​Adelfia, Puglia. It comes from an extraordinary sixty-seven-year-old vineyard, trained using old-style trellises, whose ancient vines produce concentrated grapes of rare depth. This structured wine, made from first-pressed free-run must, is unfiltered and unbarricaded. It has a deep ruby ​​red color with purple highlights. Macerated on the skins for seven to nine days with spontaneous fermentation, it ages for twelve months in stainless steel. The vines grow on calcareous-clay soil at 231 meters above sea level, where the temperature variations lend a fresh, expressive character. A powerful and authentic expression of Primitivo, according to Giorgio Nicassio's biodynamic philosophy.

The roots of this Primitivo are sunk in the oldest vineyards

Primitivo is the iconic red grape of Puglia, symbolizing the warmth and generosity of this land. Its name derives from its early ripening—"primativo" in dialect means "first ripener." Genetic studies have revealed its similarity to Croatian Crljenak and Californian Zinfandel, evidence of its ancient Mediterranean origins. But it is the extraordinary age of the vineyard that makes this Primordio unique: sixty-seven years of life represent a rare and precious heritage, because the old vines, with their deep roots and naturally very low yields, produce grapes of unparalleled concentration and complexity. The name "Primordio" evokes these ancestral origins. Cantina Giara preserves this treasure with natural and respectful winemaking, giving voice to the most authentic Puglia.

Choosing Primordium means taking care of yourself

A wine produced through spontaneous fermentation using indigenous yeasts, unfiltered, unbarricaded, and organically and biodynamically grown, represents a conscious choice toward a more natural and authentic drinking experience. Red wine, especially that obtained from grapes with long maceration, is rich in polyphenols and resveratrol, antioxidants traditionally associated with cardiovascular health when consumed in moderation. Old vines and low yields further concentrate these noble substances. Biodynamic cultivation on calcareous-clayey soil, without synthetic products, guarantees a vibrant and authentic product, with minimal sulfites. Any residues are natural. Consumed responsibly, it highlights Puglia's noblest native grape variety and a rare viticultural heritage.

How to Best Use: Primordio Primitivo

  • WITH RED MEATS AND GRILLED MEATS — Its structure calls for important dishes. Serve it with a Rib steak grilled or with roasted red meats, enhancing their flavour in a combination of strength and elegance.
  • WITH TRADITIONAL APULIA DISHES AND SALAMI — The local red for the local flavors. It's ideal with orecchiette with ragù, braciole, or with the tasty Dried Liver Sausage, in an authentic and generous union.

VINIFICATION: Destemming and spontaneous fermentation with only indigenous yeasts in stainless steel; maceration on the skins for 7-9 days at an uncontrolled temperature, with manual pumping over. Obtained from first-pressed free-run must. No fining or filtration, minimal sulfites.
AGING/REFINEMENT: 12 months in 1.000-liter steel tanks, not barrel-aged
SERVICE TEMPERATURE: 15-16° C — Dark conical Bordeaux bottle 0,75 L

VISUAL EXAMINATION

It has a deep, intense, and luminous ruby ​​red color, tending towards purple, with the natural haze typical of unfiltered wines. Any residue on the bottom is completely natural and testifies to the authenticity of the product.

OLFACTORY EXAMINATION

On the nose, it is dry and velvety, with intense aromas of ripe fruit and distinct notes of cherry, black cherry, and plum. A warm and enveloping bouquet, a typical expression of the great Primitivo di Puglia.

TASTE TEST

On the palate, it is soft, enveloping, full-bodied, and harmonious, elegant and verging on velvety—qualities that further refine with aging. It offers a progressive finish of small black fruits and a distinctive, persistent almond aftertaste.

FOOD PAIRINGS

A structured and bold red, it pairs perfectly with red meats and grilled meats, traditional Apulian dishes and cured meats, and mature, full-bodied cheeses. Its structure and smoothness make it perfect for sophisticated pairings. Serve at 15-16°C, perhaps after a brief oxidation.

The Producer: Cantina Giara

Cantina Giara is a small, family-run winery in Adelfia, Puglia, led by winemaker Giorgio Nicassio. They practice exclusively biodynamic viticulture, using natural, spontaneous fermentation vinification without fining or filtration, and define themselves as "artisans of wine."
