Melech Puglia Bianco PGI is an organic orange wine made from Greco and Malvasia grapes, grown in the Lama Baronale area of Adelfia, Puglia. This natural wine macerated on its skins for seven to eight days, unfiltered and unclarified, stands out for its intense and captivating, slightly hazy topaz color. Compared to Cantina Giara's other white wines, it features a more extensive maceration process, giving it structure and a distinct personality. The grapes come from a twenty-five-year-old espalier vineyard, on limestone, clay, and tuff soil, at 231 meters above sea level. Fermentation is spontaneous, using only indigenous yeasts and manual pumping over. VinNatur-certified and organic, it is the most minerally and spicy expression of Cantina Giara's artisanal philosophy.
The very name Greco reveals its ancient origins: it is a grape variety introduced to southern Italy by Greek colonists from Magna Graecia over 2,500 years ago, who brought it with them along with the culture of wine. Malvasia, also of Greek origin—the name derives from the port of Monemvasia in the Peloponnese—has been part of the history of the Mediterranean as one of the most widespread and beloved grape varieties in ancient trade. Vinifying these two historic varieties together with a long maceration on the skins, following the ancestral technique of orange wine, means rediscovering the flavors of their origins. The name "Melech," which in Hebrew means "king," celebrates the nobility of this wine. From ancient grapes, Cantina Giara creates a new and regal flavor.
A wine produced through spontaneous fermentation using indigenous yeasts, with a long maceration period, unfiltered, and organic and biodynamic farming, represents a conscious choice for a more natural and authentic drinking experience. The prolonged maceration on the skins preserves and enriches the grape's richness of noble substances, giving this white wine a particularly high concentration of polyphenols and antioxidants, further evidenced by its tannic structure. Cultivation on calcareous-tuffaceous soil, without synthetic products and with low yields, guarantees a lively and authentic product. Any residues and a slight haze are natural and testify to the wine's authenticity. Consumed in moderation, it is part of the convivial Mediterranean tradition, showcasing native grape varieties with ancient origins.

AGING: Minimum 6 months in 800-liter steel tanks

It has a deep topaz color, slightly hazy due to the naturalness of the unfiltered and unclarified method. Any residue on the bottom is completely natural and testifies to the authenticity of the product.
The nose is intense and distinctive: aromas of flint and macerated fruit emerge, with a distinctive mineral note that defines its character. A complex and captivating bouquet, typical of great orange wines.
On the palate, it's fresh, with elegant notes of saffron and a finish marked by a pleasant tannic note combined with hints of licorice root. A new flavor from ancient grapes, with great structure and personality, and a long, persistent finish.
A structured and spicy orange wine, it pairs perfectly with saffron and spiced dishes, rich fish and fine preserves, and mature, flavorful cheeses. Its tannic structure and mineral complexity make it capable of handling challenging pairings. Serve chilled at 8°C.
Cantina Giara is a small, family-run winery in Adelfia, Puglia, led by winemaker Giorgio Nicassio. They practice exclusively biodynamic viticulture, using natural, spontaneous fermentation vinification without fining or filtration, and define themselves as "artisans of wine."
