Shiitake and Cardoncelli Mushrooms from Lazio – Artisan Drying
The intense flavour of the undergrowth captured with artisan patience

These artisanal dried mushrooms represent the excellence of traditional preservation applied to two prized varieties: Shiitake (Lentinula edodes), an oriental mushroom rich in extraordinary nutritional properties and with an intense umami flavor, and King Oyster Mushrooms (Pleurotus eryngii), a mushroom typical of central and southern Italy with a delicate flavor and meaty texture. Both varieties are slowly dried using an artisanal method that preserves their aromas, flavors, textures, and nutritional properties, concentrating all the beneficial compounds and essential oils that make mushrooms so valuable in cooking and for health.
Shiitake, the second most cultivated edible mushroom in the world after the button mushroom, is considered the "longevity mushroom" in Asia for its immunostimulant, antiviral, and antioxidant properties, recognized by ancient tradition and confirmed by modern scientific studies. Its flavor is rich, deep, with intense umami, with notes of forest, damp earth, wood, and a slightly smoky touch. Cardoncelli Laziali, also known as king mushrooms or cardarelli, grow wild in the hilly and mountainous areas of Lazio, nestled in the roots of umbelliferous plants such as wild thistle (hence the name). Their flavor is delicate yet distinctive, with sweet notes of hazelnut, a firm and fleshy texture vaguely reminiscent of porcini mushrooms, and a versatility that makes them perfect for any preparation.
Slow, artisanal drying, conducted at low temperatures for days, removes moisture without thermal shocks that would destroy enzymes, vitamins, and volatile aromatic compounds. The result is a dehydrated product that retains its shape, color (slightly browned but not burnt), and the penetrating aroma of concentrated mushrooms. Once rehydrated in warm water for 20-30 minutes, it almost completely regains its original texture, ready to be used in risottos, sauces, soups, side dishes, fillings, or any preparation that requires the deep, authentic flavor of quality mushrooms.
Drying is one of the oldest methods of food preservation, used by humanity for millennia to preserve abundant seasonal harvests and make them available year-round. Mushrooms, being organisms with a very high water content (80-95%) and therefore extremely perishable, have been dried in the sun or near fires by foragers since prehistoric times. In Asia, shiitake has been cultivated and dried for over 1000 years in China, Japan, and Korea, considered an essential ingredient in traditional cuisine and folk medicine. In Italy, drying mushrooms (primarily porcini mushrooms but also other prized varieties) is a well-established practice in mountainous and hilly regions.
Cardoncelli Laziali are a regional specialty of Lazio, particularly prized in the provinces of Rome, Frosinone, and Latina, where they grow wild in spring and autumn. Artisanal drying allows you to enjoy these prized mushrooms even when they're not in season, preserving their organoleptic qualities.
Shiitake mushrooms are rich in bioactive compounds: polysaccharides such as lentinan, which has immunomodulatory properties, ergosterol (a precursor to vitamin D2), B vitamins (especially B2, B3, and B5), minerals (selenium, zinc, copper, and manganese), and essential amino acids. Traditional Asian medicine has used them for centuries to strengthen the immune system, support cardiovascular health, and as a general tonic. King trumpet mushrooms provide plant-based protein, fiber, B vitamins, potassium, phosphorus, and antioxidants. Both are naturally free of saturated fat, cholesterol, and sodium.
Drying concentrates all these nutrients and intensifies the umami flavor (the fifth basic taste), making dried mushrooms valuable ingredients that transform any dish by adding depth, complexity, and richness in small quantities. Furthermore, the soaking water becomes a richly flavorful broth that can be used in risottos, soups, or sauces.
Rehydrate in warm water (not boiling to preserve their properties) for 20-30 minutes until completely softened. Squeeze gently and use like fresh mushrooms. Strain the soaking water (it may contain earthy residue) and use it as a rich broth for risottos, soups, and sauces—it's rich in umami flavor.
