Organic Sicilian Lime brings the world's most cosmopolitan citrus fruit to the land that reigns supreme among citrus fruits: small green fruits with a thin, fragrant rind and juicy pulp that combines bright acidity with an aromatic bouquet that lemons can only envy. Grown in Sicily according to organic farming principles, without pesticides or synthetic waxes, it boasts a precious advantage: the zest can be grated with complete peace of mind, and it is precisely there that the lime preserves its most intense essential oils. A small fruit with enormous power, it transforms the kitchen and the glass with a single squeeze.
The lime traveled the world before arriving in Sicily: native to Southeast Asia, it traveled with Arab merchants along the spice routes—the same ones who brought the art of citrus groves to the island, the fragrant gardens that still adorn the Sicilian landscape today. It then starred in one of the great stories of medicine: sailors of the British fleet shipped it in crates to combat scurvy, earning it the nickname "limeys." Today, the circle has come full circle: the lime grows again in the Sicily of the Arabs and citrus fruits, cultivated organically.
Behind its bright acidity, lime hides generosity: it's a concentrated source of vitamin C, an ally of immune defenses and collagen production, and of antioxidant flavonoids, especially found in the zest. Its juice, virtually calorie-free, is a clever condiment that adds flavor while reducing the need for salt, while the citric acid promotes the absorption of iron from vegetables: a splash on legumes and leafy greens is a small health gesture. Organic, you can use everything—juice and zest—without worry.
At room temperature, limes retain their aroma and juiciness for about a week; in the refrigerator, in the crisper drawer, they last 3-4 weeks. For best juice, bring them back to room temperature and roll them on a cutting board, pressing with your palm: this will double the juice. The zest can be grated and frozen, ready to use in desserts and marinades.
