Poggio Felicioso's Organic Pork Loin Steaks are made from the finest cut of the pig's back: firm and tender, framed by a vein of wild-grain fat that melts away during cooking, lending juiciness and an unforgettable flavor. The pigs are born and raised 100% in the Tolfa mountains, free-ranging year-round, fed organic, GMO-free feed, and never treated with antibiotics. The supply chain is short, entirely Italian, and CCPB-certified, with no chemical preservatives or artificial additives: an honest steak that only requires a scorching pan and a few minutes to put on a show.
The loin has always been the pork cut of honor: at Italian Renaissance banquets, the great court chefs—first and foremost Bartolomeo Scappi, chef to the popes—sold the loin for the most important tables, spit-roasting it with herbs and citrus fruits. In the countryside, the loin chop was the prize for special occasions: the thick, generous slice that the pork butcher would carve for celebrations, to be cooked over the embers of the fireplace in front of the whole family. From the papal court to the peasant hearth, this cut has spanned the centuries as a symbol of celebration and abundance: a legacy that the wild pig of Tolfa fully honors.
The loin combines the best of two worlds: lean meat rich in high-quality proteins and a layer of high-quality wild-grain fat that adds flavor without being overpowering. It's a generous source of vitamin B1—of which pork is a prime example—as well as niacin, iron, zinc, phosphorus, and selenium, allies of energy, immune system, and muscle health. Free-range rearing, with daily exercise and a natural diet of organic grains, enhances the nutritional quality of the meat, while the certified absence of antibiotics, preservatives, and artificial additives guarantees complete transparency from pasture to plate.
Since 2016, amidst the pastures of the Tolfa mountains, Poggio Felicioso has been raising over 300 free-range pigs with a completely closed supply chain: home-grown grains, artisanal slaughtering and processing, CCPB organic certification, and one rule: zero compromise on quality.
