La Mantuan pumpkin, also known as the priest's hat, è an ancient variety rather difficult to peel due to its irregular shape.
Its pulp è floury e tasty, dry e this is why it is excellent for creating fillings with fresh pasta, such as the famous tortelli di "zucca".

Mantuan pumpkin (Cucurbita maxima)
Appearance: typical of the region from which it takes its name, it has a gray-green skin, turban-shaped hat, yellow-orange pulp. Revolutionary: very mellow and compact, the squash Mantovana it has a sweet and delicate taste.
In addition to vitamin A, the pumpkin contains also vitamins C and B1 along with many minerals including calcium, phosphorus sodium and potassium. Also present are amino acids and fibers.
