The spice with enchanting aromas, warm and woody, from Demeter biodynamic agriculture
A pinch of nutmeg and you're back to being a child, among the creamy béchamel sauces of childhood
Les Jardins de Gaïa's Biodynamic Nutmeg captures the finest flavors of Sri Lanka's terroir, grown biodynamically and certified Demeter. Its warm, woody fragrance is a delicious and generous spice for stews and slow cooking, reminiscent of the creamy béchamel sauces of childhood. Interestingly, two spices come from a single fruit: nutmeg comes from the seed of the Myristica fragrans tree, which, when ripe, splits open, releasing the seed surrounded by mace—the "flower" of nutmeg—also used in cooking. Freshly ground or grated to release its full aroma, it is a genuine and prized spice, the fruit of respectful agriculture and fair trade.
Nutmeg boasts a fascinating and turbulent history, originating from the remote Banda Islands in Indonesia, the legendary "Spice Islands." For centuries, its provenance was one of the world's best-kept and most contested secrets: so precious that it sparked wars, conquests, and a monopoly jealously guarded by the Arabs, Portuguese, and Dutch. In the Middle Ages and Renaissance, it was worth a fortune, considered not only a prized flavoring but also a valuable remedy. The curious thing about this spice is that the fruit of the Myristica fragrans tree emits two distinct aromas: the nutmeg itself and the mace that envelops it. Today, also cultivated in Sri Lanka, it retains its exotic charm intact. Les Jardins de Gaïa safeguards its authenticity with a Demeter-certified biodynamic supply chain.
Nutmeg has been prized for centuries not only for its aroma, but also for its traditional virtues. It is known for its digestive and carminative properties, useful for countering bloating and intestinal fermentation, which is why it is often paired with rich, creamy dishes like béchamel. It contains aromatic essential oils and antioxidant compounds. However, it should be used sparingly: its intense aroma allows for flavoring dishes with very small amounts, and it is precisely in moderate doses that it expresses its full potential, enriching dishes without overpowering them. Its intensity also allows for reducing the use of salt. Its biodynamic origin guarantees a pure spice, free from synthetic chemical residues and processed with respect for the plant and the environment.
Les Jardins de Gaïa has always offered teas, herbal teas, and spices from organic and biodynamic agriculture. A certified member of the WFTO (World Fair Trade Organization), it has been committed to fair trade since its founding, ensuring fair practices from plant to finished product. The company promotes Demeter-certified biodynamic agriculture, based on an original balance in which humans live in harmony with the chain of life. Certified organic since 1994 and biodynamic since 2003.
