This Organic Raw Cow's Milk Mozzarella isn't just any dairy product, but the result of "a lot of attention," as the producer likes to call it. Made in Fiumicino within a very short and controlled supply chain, it's made exclusively from raw milk from a single milking. The decision not to pasteurize the milk allows the rich aroma of the pastures and the natural microbial biodiversity to be preserved intact, giving the finished product an intense, sweet, and complex flavor that industrial mozzarellas can't replicate.
The transformation process is a tribute to patience and craftsmanship. Freshly milked milk is enriched with the previous day's whey (known as "whey starter"), natural rennet, and salt. No acidity regulators are added, just time: the slow acidification of the curd in the whey is the secret to its perfect texture. Stretching and cutting are done strictly by hand, giving each bite the supple, juicy texture that distinguishes true artisanal mozzarella.

The roots of this mozzarella are deep in tradition

The technique used for this mozzarella revives the ancestral methods of stretched-curd cheesemaking. The use of whey starter, a practice that has almost disappeared from mass production due to the lengthy processing time it requires, is essential for developing the cheese's unique aromatic bouquet. The manual "mozzatura," the precise movement with which the cheesemaker "cuts" the stretched-curd cheese to form the sphere, is an art that requires mastery and experience, ensuring that the outer skin is shiny and protective while the center remains soft and milky.
