Tagliatelle is the pasta shape everyone associates with celebrations and Sunday lunch, but almost always with eggs. These are different: they're made with organic Senatore Cappelli whole-wheat semolina and water, nothing else. It's a choice that transforms the dish, because without the egg dominating, the wheat's character emerges—that ancient, full, and slightly bitter flavor that Cappelli brings—and the pasta remains drier, more textured, capable of holding the sauce without softening. The wheat is grown and milled in Italy, and cooking takes 10-12 minutes. A wide, rough ribbon, designed for rich sauces.
Few pastas have an official measurement, but tagliatella does. In 1972, the Confraternita del Tortellino and the Italian Academy of Cuisine deposited a gold standard of the perfect tagliatella with the Bologna Chamber of Commerce: exactly 8 millimeters wide when cooked, equal to a precise fraction of the Asinelli Tower. It's a gesture that makes you smile and speaks volumes about the importance this shape holds in Italian gastronomic culture. Tagliatella Bolognese, however, is a product of egg pasta and the North. This version tells a different story, that of Central and Southern Italy and durum wheat, where pasta has always been made with semolina and water, and where the slowly dried ribbon shape was the way to have long, wide pasta in the pantry without having to roll out the dough every time.
With 13 g of protein and 7,1 g of fiber per 100 g, these tagliatelle offer a remarkable nutritional value for a pasta: the whole-wheat semolina preserves the bran and germ of the grain, the parts eliminated during refining and which contain fiber, B vitamins, and minerals. They contain just 2,2 g of fat, of which only 0,2 g is saturated, and they contain virtually no salt, at 0,02 g per 100 g. Since they are egg-free, they are also suitable for a plant-based diet, and the Senatore Cappelli wheat—an ancient, tall variety—is particularly popular among those seeking grains less selected for their yield and more closely tied to tradition.

Store in a cool, dry place, away from light and heat, resealing the package tightly after opening. Since this is whole-wheat pasta, which contains the fattiest parts of the grain, it should be consumed by the indicated date and stored away from moisture. When cooking, stir gently in the first few moments to prevent the pasta strips from sticking together.
