Dellerba's Pinerolese DOC Rosato Brigit Rosè

Il Pinerolese DOC Rosato Brigit Rosè It was born from an idea as simple as it was intelligent: to transform the thinning of the grapes at the end of August into a wine. When the bunches of grapes in the vineyard become lighter, Freise To concentrate the quality of the main harvest, Dellerba collects the still fresh, acidic grapes and takes them to the cellar for delicate processing. Destemming, soft pressing, pressing and then a fermentation at a controlled temperature of 15°C which preserves the most fragile aromas of the grape variety intact, before being refined in steel until bottling.

The result is an authentic rosé of the Pinerolo, son of vineyards 550 meters of altitude facing south-west, trained in Guyot on sandy soils with high minerality. In the glass it presents itself with a salmon pink color with orange reflections, a delicate nose of fruity and floral notes and a fresh, taut palate, in which the acidity enhances the minerality of the soil. A ready-to-drink wine, certified Independent Winemakers, designed for aperitifs and light meals, to be served at 8°C.

The roots of this Pinerolese DOC Rosato Brigit Rosè are deep in tradition

La Freise It is one of the oldest vines in Piedmont, and the lands between Pinerolo and the Turin plain hold its most remote memory: the first written document attesting to its existence dates back to 1517, in a Pancalieri customs register, where "fresearum" grapes were listed at double the price of other varieties. An unmistakable sign of the value already recognized at the time. DNA studies later revealed its direct relationship with Nebbiolo, placing it firmly among the noble subalpine grapes.

Il Pinerolo DOC, recognized in 1996, gave a name and protection to this border viticulture, made up of vines perched on the first Alpine foothills, where the cold nights and sandy soils yield light, fragrant wines. Vinifying Freisa rosé, starting with the grapes thinned out from the clusters, is a practice that combines the peasant wisdom of wasting nothing with the modern pursuit of freshness: the gesture that improves the red wine simultaneously gives rise to a rosé that recounts the same vineyard with a lighter voice.

Choosing the Pinerolese DOC Rosato Brigit Rosè means taking care of yourself

A dry rosé like the Brigit Rosè It is a measured and conscious choice. With its 12,5% vol. it has just 69 kcal per 100 mlIt's a light wine, with virtually no residual sugar, that won't weigh down the palate or the day. Freisa is a grape naturally rich in polyphenols and anthocyanins, compounds with antioxidant properties that, when vinified as a rosé, are transferred to the wine in subtle yet present quantities.

Low-temperature fermentation and aging in steel only yield a clean, linear wine, without a hint of wood, while the acidity makes it particularly digestible and suitable for accompanying light dishes without overpowering them. Choosing a wine from a independent winemaker It also means knowing exactly who grew the grapes and who made them: a short, transparent supply chain that respects the local area. The truest pleasure remains that of moderate consumption, sipped slowly and in good company.

How to Best Use: Pinerolese DOC Rosato Brigit Rosè

  • PIEDMONTESE-STYLE APERITIF, WITH A MEDITERRANEAN HEART: Serve the Brigit Rosé very cold, at 8°C, and let its acidity play with the salt and crispness. Next to the glass, the Culetti Seed Crackers, which recall the notes of flowers and dried fruit of the wine, a bowl of Fermented Green Olives in Brine for the savory component and a few cubes of Organic sheep's cheese Primo Sale, whose lactic sweetness and aniseed note find a perfect companion in the rosé.
  • DELICATE SEAFOOD APPETIZER: The sandy minerality of this rosé is made for fish. Prepare some toasted slices of Semi-wholemeal Country Bread and lay them on top Cetara Anchovy Fillets in Extra Virgin Olive Oil, with a drizzle of their olive oil and a few stems of glasswort adding a crisp, sea-salty touch. The refreshing sip cleanses the saltiness of the anchovies and invites you to the next bruschetta.
  • WHITE MEATS WITH THYME AND LEMON: Brigit Rosè is at its best with white meats. Marinate a Free Range Chicken Breast with oil, zest and juice Organic Amalfi Coast Lemon and leaves of Organic dried thyme, cook it in a pan and serve it with Trumpet Zucchini sautéed: the citrus and herbaceous notes of the dish reflect the floral freshness of the wine, which accompanies the meat without ever overpowering it.
