Pimi Bianco is the jewel in the crown of the Calabrian winery: a refined white wine made from pure Malvasia grapes, produced in just 2000 bottles—the house's smallest production run. Malvasia, a white grape grown in Calabria and known for its complex aromatic profile, is processed with a brief two-day maceration and aged in stainless steel to preserve its elegance. The result brings out the best of the grape: a delicate, floral bouquet with notes of citrus and tropical fruit, a rich, structured palate with well-balanced acidity, and a long, satisfying finish enhanced by nuances of honey and toasted almonds. A wine that will impress even the most discerning palates.
In the peasant cellars, a silent ritual has always existed: the best barrel, the one made from the healthiest grapes harvested from the most suitable spot in the vineyard, wasn't sent to market—it was the winemaker's Sunday wine, the one uncorked for a baptism, for a distinguished guest, for special occasions. A micro-reserve ante litteram, guarded with pride and shared sparingly. Pimi captures that spirit: just two thousand bottles, the selection a winery makes when it decides to give its Malvasia the spotlight it deserves. The Sunday wine, finally, leaves the family cellar.
Visual examination: bright straw yellow with delicate golden reflections, a gift from the short maceration.

Taste test: Rich and structured, with well-balanced acidity; the complex profile reveals nuances of honey and toasted almonds and a subtle mineral note, leading to a long and satisfying finish.
Technical data: 100% Malvasia; 12,5% alcohol by volume; 2-day maceration; aged in stainless steel; production of 2000 bottles.
Pairing suggestions: Raw seafood and shellfish, seafood pasta dishes, fine cured meats and fresh cheeses, poultry with citrus fruits and herbs; also surprising with small dry almond pastries.
Founded in 2015 in the Crati Hills from the friendship between Daniela De Marco, Giampiero Ventura, the singer-songwriter Brunori Sas and Emilio Di Cianni, Le Quattro Volte creates natural wines from native Calabrian vines: spontaneous fermentations, no filtration and sulfur always below 30 mg/l.
