“La Elda” is one of La BeeO Baita's signature kombuchas: a vibrant, non-alcoholic, refreshing, and thirst-quenching beverage. Made through the spontaneous fermentation of black tea, flavored with lychee and lemon zest, and refermented in the bottle with homemade acacia honey, it's sweet and delicate, like the honey from which it takes its sweetness, but with ginger that stands out, giving it a crisp, peppery flavor. Unpasteurized, unfiltered, and naturally carbonated, it retains all the vitality of fermentation. Embellished with cornflower petals, it's a small artisanal masterpiece dedicated to Elda, a grandmotherly figure in Alice's heart. A genuine beverage that embodies home, family, and the support she can always count on.
Kombucha is an ancient Asian beverage made from the fermentation of an infusion—traditionally tea—with sugar and flavorings. Known in the East for over two millennia, where it was prized as an "elixir of long life," it has gradually spread throughout the world, captivating those seeking natural, vibrant beverages. The heart of kombucha is the "mother," called a SCOBY (Symbiotic Culture of Bacteria and Yeast), a symbiosis of lactic acid bacteria, acetic acid bacteria, and yeasts that processes the sugars in the liquid through alcoholic and subsequently lactoacetic fermentation. After maturation, a non-alcoholic beverage is obtained, with a pronounced acidity and a light, natural fizz. BeeO Baita reinterprets this ancient tradition with its own honey and local flavors.
Kombucha is appreciated as a living and functional beverage thanks to its characteristic fermentation. Unpasteurized and unfiltered, it preserves the live microorganisms and organic acids produced during fermentation, traditionally associated with intestinal health. The ginger in this recipe adds its well-known digestive and tonic properties, while black tea provides natural antioxidants. Non-alcoholic, thirst-quenching, and low in calories—just 14 kcal per 100 ml—it represents a pleasant and wholesome alternative to sugary and carbonated commercial drinks. Organic acacia honey naturally sweetens it. Inside the bottle, during the second fermentation, a new little mother forms: a gelatinous disk of bacterial cellulose, a testament to the beverage's vitality, which can be consumed without any side effects or discarded.
BeeO Baita is a small organic farm in Dicomano, in the heart of the Tuscan Mugello, founded by Alice and Simone, "guardians of bees and biodiversity." Their kombuchas are made through spontaneous fermentation and secondary fermentation in the bottle with their own honey. "La Elda" is dedicated to Elda, Alice's grandmother: a strong and unbreakable bond, made of simple things and true love, which the sweet and spicy aromas of this drink express.
