A coffee break in seconds—and the secret ally of desserts and creams

Anyone who thinks instant coffee is synonymous with compromise has never tried a well-made instant coffee. This one is made from a selection of 100% organic Arabica coffees, roasted Italian-style and freshly ground: a more decisive roast, the one Italy has made famous worldwide, which delivers a full-bodied flavor in the cup rather than the watery flatness with which this format is often associated. It's ideal for a quick, tasty coffee break—all you need is hot water and a teaspoon—but it also excels in a use that too many overlook: the preparation of desserts and creams, where its aromatic concentration works better than any liquid coffee.
Instant coffee emerged between the late 19th and early 20th centuries from parallel experiments on different continents, but it was in the 1930s that the modern process took shape, at the request of Brazil: the country was producing more coffee than the world could absorb, and was looking for a way to preserve its surplus crops without losing its aroma. The solution was to extract the coffee and then dehydrate it, obtaining a powder that regains its body upon contact with water. From there, instant coffee conquered the world, often at the cost of quality—and this is precisely the prejudice that an artisanal roaster like Morettino is tasked with debunking: starting with select organic Arabica beans and Italian-style roasting means bringing the same attention paid to ground coffee to the most practical format available.
Pour 1 or 2 teaspoons of the product into 80°C hot water and stir. The temperature doesn't matter: boiling water burns the more delicate aromas, while at 80°C the bouquet remains intact and the flavor is purer.
The label values reveal a nutritionally surprising product: 21 g of protein and a whopping 20 g of fiber per 100 g, with just 2 g of sugar and a fat content of less than 0,5 g. Naturally, this product is consumed in minimal doses—one or two teaspoons per cup—so the actual dietary intake per serving is low, but the profile remains that of an essential food with no additives. Coffee is also one of the main sources of antioxidants in the Western diet, particularly chlorogenic acids, and organic selection guarantees the absence of synthetic residues throughout the supply chain.
Morettino, a Palermo-based coffee roaster established in 1920 and now in its fourth generation, applies the same rigorous approach to its entire range: selecting raw materials directly on the plantation, organic roasting, and fully monitoring the supply chain, from bean to cup—even when a cup is prepared in ten seconds.
Store the container tightly closed in a cool, dry place, away from light and humidity: the instant tea is hygroscopic and tends to compact when exposed to humid air. Always scoop with a dry teaspoon and reseal carefully after each use to preserve the aroma until the last cup.
