Risotto with Sicilian aromas, a really tasty recipe, easy to replicate and very tasty.
Ingredients for 2 people:
Sicilian organic tarocco orange 1
Marchetti organic pink rice 150g
Vegetable broth 1l
Oil to taste
Onion 1
White wine to taste
Chopped parsley 2 tbsp
Salt up to taste
Pepper as needed
Parmigiano Reggiano to be grated 30g
Butter to taste
Let's start the recipe:
💦Wash the orange well, remove the peel with a potato peeler (avoiding the white part which would be bitter) and cut the peel into thin sticks.
🍊Squeeze the orange and keep the juice.
🔥 Blanch the orange peel sticks for a couple of minutes in a saucepan with a little water and then drain them.
🥣In the meantime, prepare the vegetable broth.
🧅 Chop the onion and fry it in oil then add the rice, toast it for a couple of minutes, deglaze with white wine and add the orange juice.
🍚Stirring, finish cooking the rice, adding the vegetable broth as needed.
🌿🧂A few minutes after cooking, add a sprinkling of parsley, the sticks of orange peel and season with salt and pepper.
🧈When the fire is off, add the grated Parmesan cheese and stir in a knob of butter.
