Saba or cooked must is obtained from the freshly prepared must of white or red grapes; it is also known as "cooked must", "cooked wine" or "grape honey".
The must is poured into a copper pot together with some whole walnuts which, turning over in the slow boil, help the must not to stick to the bottom of the container.
The saba is ready when it is reduced to a third of its initial quantity.
It is very sweet and keeps well thanks to the sugar content.

A very thin sheet of dough contains a filling of saba, almonds and aromas, a characteristic dessert of the Sardinian tradition that is prepared for the festivities of all Saints, are the Tiliccas de saba that change name according to the area, we can also find them as Caschettas, Thiriccas, Tiricche.

It is used in confectionery on traditional sweets such as Christmas bread or "Turtei sguasarot" and is the basic ingredient, together with strong vinegar, of the traditional balsamic vinegar of Modena.
