For the cream
Whole cream: 25 cl
Powdered sugar: 25 g
2g of gelatin sheet: 1 piece
For the sauce
Passion fruit: 3 pieces
Orange juice: 10 cl
Corn starch: 5 g
Water: 5 cl
Put the gelatin in cold water to soften it.
Bring the cream with the sugar to the boil and turn off the heat.
Wait 2 minutes for the cream to cool and add the gelatin.
Mix and divide the cream into 6 small verrines. Leave to rest in the refrigerator for at least 45 minutes.
Cut the passion fruit in half and remove the seeds.
Mix these with the orange juice in a saucepan.
Bring the juice to a boil, mix the cornstarch with cold water.
Pour it all over the hot fruit juice, stirring constantly. Bring back to the boil then pass everything through a sieve. Reserve in the refrigerator.
Pour the cold exotic coulis over the panna cotta.
