Poggio Felicioso Organic Sweet Salami is Tolfa's delicatessen at its finest: meat from 100% free-range pigs, minced and artisanally cured with a "sweet"—that is, delicate, never spicy—seasoning of salt, pepper, fennel, and juniper. The animals are raised free in the Tolfa mountains, fed organic, GMO-free feed, never treated with antibiotics, and sourced entirely from Italy, using a CCPB-certified short supply chain. The slow, natural curing process and the use of premium wild-grain fat give each slice a velvety softness and an aromatic fragrance that captivates from the first cut.
The marriage of salami and fennel has a history as tasty as its protagonist: it's said that in central Italy, the most cunning innkeepers would offer fennel salami before serving wine, because its aromatic seeds "sweetened" the palate, masking the defects of the barrels—hence the verb "infinocchiare." Juniper, on the other hand, is the scent of the moors and high pastures, long harvested by pork butchers to give cured meats that balsamic, wild note. This sweet cured meat thus combines the cunning of the innkeepers and the wisdom of the shepherds: two souls of Italian tradition that the wild pig of Tolfa unites in a single cured meat.
Wild-fed pork salami is a powerhouse of good energy: complete proteins with high biological value, highly absorbable iron, zinc, and B vitamins, essential for the metabolism and nervous system. The fat from free-range animals, formed through daily exercise and a diet of organic grains, has a more balanced and aromatic profile than conventionally raised animals. Fennel and juniper, in addition to their aroma, also contribute their traditional digestive properties: it's no coincidence that pork butchers also chose them to make cured meats "lighter" on the palate and stomach.
In the Tolfa mountains, Poggio Felicioso raises over 300 free-range pigs and personally oversees every stage of the supply chain, from the grains grown on-site to the artisanal pork butcher's shop: CCPB organic certification and uncompromising quality, slice after slice.
