Quinoa is a versatile and nutritious superfood that can be integrated into many dishes.

3. Gluten-free: quinoa is suitable for people following a gluten-free diet. It is therefore a good alternative to wheat, barley and other gluten-containing cereals.

Easy Quinoa Recipe with Vegetables

Quinoa is a nutritious and versatile food that lends itself to many preparations. A quick and easy recipe could be the following:

1 – In a saucepan, bring 1 cup of water with ½ teaspoon of salt to a boil. Add half a cup of washed quinoa. Cover and lower the heat. Cook for about 15 minutes.

2 – In a separate pan, heat a spoonful of extra virgin olive oil and add a chopped onion and two cloves of garlic, also chopped. Fry over medium heat. Add a cup of diced vegetables (such as zucchini, peppers and carrots) and cook for 5-7 minutes.

3 – Combine the cooked quinoa with the vegetables, mix well and serve hot. You can also add a little lemon juice and a pinch of black pepper for flavor.
