In cooking, thyme is highly appreciated both for its organoleptic qualities and for its digestive effect.
It goes well with many foods such as roasted or stewed meats, fish, vegetables, mushrooms, oils and aromatic vinegars.
Also used to perfume wines and to prepare liqueurs (for example the benedictine), its infusion is an excellent substitute for tea or coffee.
Unlike what happens to other spices, thyme does not lose its aroma after drying, on the contrary, its aroma is more intense, as also happens for oregano and rosemary.
Thyme is found in various spice blends such as the famous herbs of Provence, widely used in French cuisine, in zahter, a Girordan blend in which thyme is the main spice, and in dukka Egyptian, where it is accompanied by cumin and coriander.
Used since the time of the Ancient Egyptians for embalming, thyme was highly valued in Greece, where the thyme honey was considered a delicacy, and in the Roman Empire where soldiers sprinkled themselves with water and thyme convinced that this plant infused courage and vigor (the name thyme derives from the Greek and means "courage").
